Ingredients:
1 packet of Youmee Plain Noodle
Half an avocado
1 mango
1 large tomato
Chopped lettuce or salad greens of choice
Sunflower seeds or pepitas
Dressing:
1 small passionfruit or ½ large passion fruit
1 ½ tbsp red wine vinegar or balsamic vinegar
2 tbs olive oil
Salt and pepper to taste
Method:
- Bring a large pot of water to boil. Add the Youmee noodles and cook until just tender, 2 to 3 minutes. Drain in a colander and immediately rinse the noodles well with cold water. Shake the colander to remove excess water. Set aside.
- Dice mango, tomato and avocado.
- In a small bowl, mix all of the dressing ingredients together.
- Chop or tear lettuce (if using) into bit size pieces.
- Mix all the salad ingredients together and drizzle the dressing on top.
- Top with sunflower seeds for extra crunch. Serve immediately.
