Mango and Avocado Salad with Passion Fruit Vinaigrette

Serves : 2 pax

Time : 30 minutes

Ingredients:

1 packet of Youmee Plain Noodle
Half an avocado
1 mango
1 large tomato
Chopped lettuce or salad greens of choice
Sunflower seeds or pepitas

Dressing:

1 small passionfruit or ½ large passion fruit
1 ½ tbsp red wine vinegar or balsamic vinegar
2 tbs olive oil
Salt and pepper to taste

Method:

1. Bring a large pot of water to boil. Add the Youmee noodles and cook until just tender, 2 to 3 minutes. Drain in a colander and immediately rinse the noodles well with cold water. Shake the colander to remove excess water. Set aside.
2. Dice mango, tomato and avocado.
3. In a small bowl, mix all of the dressing ingredients together.
4. Chop or tear lettuce (if using) into bit size pieces.
5. Mix all the salad ingredients together and drizzle the dressing on top.
6. Top with sunflower seeds for extra crunch. Serve immediately.
